Tuna tataki with wasabi mayo on crispy wonton.

Canapés

  • Tuna tataki with wasabi mayonnaise on crispy wonton (pictured).

  • Soft boiled quail egg, truffle cream, baby asparagus on sourdough croute.

  • ​Fois gras terrine with armagnac and fig chutney served on sablé.

  • Pani puri filled with aloo, pomegranate and mint salsa. 

  • Crispy sushi rice with teriyaki salmon, yuzu gel and furikake.

  • Persian-styled lamb neck, rosemary cracker and carrot hummus. 

Shallot, cherry tomato and olive tart tatin with goats’ cheese and basil

Starters

  • Shallot, cherry tomato and olive tart tatin with goats cheese and basil (pictured).

  • Dashi broth with shiitake mushrooms, seaweed salad and pickled ginger.

  • Courgette flowers stuffed with mozzarella and anchovies, courgette purée and broad beans.

  • Lobster, white asparagus, orange and avocado salad and orange sabayon.

Beef Wellington, fois gras, truffle mash potato, wilted spinach, bone marrow sauce

  • ​Slow cooked ox cheek, red cabbage purée, salt-baked celeriac, peppercorn sauce.

  • Spiced lamb cannon, slow roasted aubergine with saffron, green olive salsa verde, crispy kale.

  • Dover sole ballotine with spinach, crispy leeks, braised leeks, mash potato and fish stock velouté.

  • Thai-style steamed sea bream, lime leaf jasmine rice, garlic and chilli morning glory and nam jim sauce.

  • Filo and goats cheese parcel, toasted almonds, caramelised cipollini onions, red wine glaze.

Classic rasberry tart.
